Soy and Ginger Baked Salmon with Rice and Vegetables

Ingredients

  • 4 salmon fillets
  • 1/4 cup soy sauce
  • 2 tablespoons fresh ginger, grated
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1/2 teaspoon black pepper
  • 2 green onions, sliced (for garnish)
  • Sesame seeds (for garnish)
  • 2 cups cooked rice
  • 2 cups mixed vegetables (such as broccoli, bell peppers, and carrots)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, whisk together the soy sauce, grated ginger, honey, minced garlic, sesame oil, rice vinegar, and black pepper to create the marinade.
  3. Place the salmon fillets in a shallow dish and pour the marinade over them, ensuring they are evenly coated. Marinate for at least 15 minutes.
  4. Line a baking sheet with parchment paper and place the marinated salmon fillets on the sheet.
  5. Bake the salmon in the preheated oven for 12-15 minutes or until the salmon flakes easily with a fork.
  6. While the salmon is baking, prepare the rice and steam or sauté the mixed vegetables until tender.
  7. Remove the salmon from the oven and let it rest for a couple of minutes.
  8. Serve the salmon alongside the cooked rice and vegetables, garnished with sliced green onions and sesame seeds.
