- 4 salmon fillets
- 1/4 cup soy sauce
- 2 tablespoons fresh ginger, grated
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1/2 teaspoon black pepper
- 2 green onions, sliced (for garnish)
- Sesame seeds (for garnish)
- 2 cups cooked rice
- 2 cups mixed vegetables (such as broccoli, bell peppers, and carrots)
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, whisk together the soy sauce, grated ginger, honey, minced garlic, sesame oil, rice vinegar, and black pepper to create the marinade.
- Place the salmon fillets in a shallow dish and pour the marinade over them, ensuring they are evenly coated. Marinate for at least 15 minutes.
- Line a baking sheet with parchment paper and place the marinated salmon fillets on the sheet.
- Bake the salmon in the preheated oven for 12-15 minutes or until the salmon flakes easily with a fork.
- While the salmon is baking, prepare the rice and steam or sauté the mixed vegetables until tender.
- Remove the salmon from the oven and let it rest for a couple of minutes.
- Serve the salmon alongside the cooked rice and vegetables, garnished with sliced green onions and sesame seeds.
