Serves 4
Perfectly Cooked Rice

Ingredients

  • 300g basmati rice
  • 550ml water
  • ½ tsp salt

Instructions

  1. Put the rice in a fine sieve and rinse under cold running water for 1–2 minutes, gently moving the grains, until the water runs almost clear. Drain well.
  2. Bring the water and salt to a boil in a medium saucepan over high heat. Add the drained rice and stir once to stop the grains sticking together.
  3. Let the water return to a gentle simmer, then immediately reduce the heat to low and cover with a tight-fitting lid. Cook for 12 minutes without lifting the lid—the water should be absorbed and small steam holes should appear across the rice.
  4. Remove the pan from the heat and leave it covered for 10 minutes. This resting time lets the grains finish steaming without becoming soggy.
  5. Lift the lid and gently fluff the rice with a fork, separating the grains without crushing them. Taste and adjust the salt before serving.
