Jacket Potato with Cheese & Beans
A truly comforting classic, these jacket potatoes are baked until the skin is wonderfully crisp and the inside is fluffy, then loaded with rich baked beans and plenty of melted cheese—a perfect family meal.

Ingredients
- 4 large baking potatoes
- 2 tbsp olive oil
- 1 tsp sea salt
- 5 tsp black pepper
- 2 x 400g cans baked beans
- 200g cheddar cheese, grated
- 50g butter, for serving
Instructions
- Preheat your oven to 200°C / 180°C fan.
- Give your potatoes a good scrub under cold water, then pat them completely dry. Use a fork to pierce each potato all over—this helps the steam escape and prevents explosions!
- Rub each potato generously with the olive oil, then sprinkle with the sea salt and black pepper. Place them directly onto the oven rack.
- Bake for 1 hour 15 minutes to 1 hour 30 minutes, or until the skin is wonderfully crisp and the inside feels soft when squeezed gently.
- About 10 minutes before the potatoes are ready, pour the baked beans into a saucepan. Warm them over medium heat, stirring occasionally, until hot and bubbling.
- Carefully remove the cooked potatoes from the oven. Using a sharp knife, cut a deep cross into the top of each potato.
- Gently squeeze the sides of each potato to open it up, then use a fork to fluff up the soft interior.
- Pop a knob of butter into each potato, then spoon over a generous helping of warm baked beans and top with the grated cheddar cheese.
- Serve immediately and enjoy that comforting goodness!
